Meet The Chef
G'day my name is Roman Petrack and I am a professionally trained Chef who has worked in the hospitality industry for over 20 years. I was born in New Zealand as the son of a renowned patisserie and raised both in the Netherlands and Australia. As a kid my dad always told me never to get into kitchens due to the long hours and lack of interaction with the outside world. But then when I was 16 he came to me he had gotten me a job in his friend's restaurant. That turned out to be the start of an exciting and rewarding career working in hospitality industry. After a couple of years working in various restaurants after high school I decided to take on a 4 year culinary arts degree at the Culinary Arts Institute of Tasmania, Australia from which I graduated with honers and with the award for the highest achieving hospitality student in my final year. My degree led me to work in award- winning restaurants including the fine dining Quil and Cane in Tasmania and the very popular Michel’s (which received the “Best Restaurant” award in North Queensland for 3 consecutive years). When I first came to the US from Australia I took a break from cooking and worked at a non-profit animal shelter in Denver, Colorado. What was meant to be a 6 month break turned into a 4 year stint. I missed cooking though and so decided to get back into the kitchen. After a couple of months working in restaurants I decided they just weren't for me anymore and so embarked on the journey of creating my own personal chef business. Although clients were mainly families and busy professional couples, I was also fortunate enough to be the Private Chef for NBA player Larry Hughes and NFL player Isaac Bruce (until he got drafted to San Francisco). After 3 years of just being a Personal Chef the catering aspect of my business was added. Now with over 16 years experience as a chef in the restaurant industry and 7 years as the chef and owner of Kangaroo Catering, I strive to provide clients with creative original menus, great tasting food, artistic presentation and all with professional, friendly service. Unlike a lot of catering companies who offer set menus to choose from, I like to offer my clients a more restaurant style of selecting choices allowing the menu to be personalized to suit each individual client. Menu items are also all made from scratch and are prepared the day of your event. I also like to add to the atmosphere of each event by adding a social aspect and a little of my Australian charm.
